Persian Mulberry Confection: A Sweet Intro to Persian Cooking

Persian food is poised to be the next hot thing on the culinary scene. But what is Persian food exactly? In this class, we will start with a short audio visual lecture as a general intro to Persian cooking: the philosophy of ‘hot’ and ‘cold’ food; trademark ingredients; quintessential flavorings, and the classic types of Iranian dishes.
We will then move on to the hands-on portion of class and learn how to make a batch of “Persian Mulberry Confection” — a delightful sweet called “tut” in Farsi, which literally translates to ‘mulberry’ — a staple confection offered at weddings, celebrations, and other festive gatherings.
This sweet bite-sized Persian nibble is made with ground almonds, sugar, cardamom and rosewater, mixed into a dough, and formed in the shape of a mulberry — thus, its name. It even gets a little pistachio stem. Very cute!
The ingredients are few and the end result is a festive, visually appealing and decidedly toothsome treat.
