Whether you’re a graduate of Knish History 101 or neophyte in knishes, this course invites you to bolster your knowledge of the iconic stuffed dough that’s synonymous with New York City. (First tip: Pronounce the “k.”)

Food scholar Laura Silver returns with her hot-off-the-presses first book, Knish: In Search of the Jewish Soul Food (Brandeis University Press) to help you pump up your personal knish quotient. The course kicks off with taste tests and a quick quiz and continues with an examination of great (and not so great) moments in knish history.

Forays into literature, linguistics and landscapes of Brooklyn and the Lower East Side will shape your new-found savvy in savory pies. You’ll examine recurring debates in the knish-o-sphere (round v. square, sweet v. savory, traditional v. newfangled) and you’ll leave the course conversant in all things knish, just in time for the global renaissance.
